Candy Cane Cupcakes

By Cordelia Coyle

Take your favorite cupcake recipe, and bake up a batch (chocolate matches very nicely with peppermint frosting). Make a standard buttercream frosting for 12 reg size cupcakes:

Candy Cane Cupcakes
  • 1 stick butter or for a vegan diet, margarine like Earth Balance (vegan, non-hydrogenated, no trans-fats, non-GMO, etc.)
  • 1 1/2 - 2 cups organic icing sugar (adjust to get the right consistency)
  • 2 tablespoons milk or water (could use soy, almond or rice milk as a substitute)
  • 1/8 - 1/4 teaspoon of pure peppermint oil (start with small amount and adjust to taste)

Let butter or margarine come to room temperature in a medium sized bowl. Gently mix in 1 cup of the icing sugar and the liquids with a wooden spoon. Add another 1/2 cup of icing sugar, stir in briefly, then use an electric mixer to whip frosting for approximately 2 minutes. Add more icing sugar if needed to get creamy consistency, but stiff enough for piping or spreading.

Decorate cupcakes:

prepare the crushed candy cane topping:

  • unwrap and break up a Pure Fun candy cane into a ziploc bag (this can also be done on a plate or hard work surface is covered with cling wrap)
  • use the bottom of a heavy glass or mug, or rolling pin to gently smash the cane into pieces suitable for sprinkling on top of cupcake.

Pipe or spread prepared frosting onto completely cooled cupcakes. Working quickly while frosting is still moist, sprinkle crushed candy cane on top of frosting.

Special tip: to make a natural pink peppermint frosting, try mixing in a small amount of beet puree or beet paste made from beet powder and water - the peppermint masks any beet taste!
